Ingredients

For the Falafel:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 small onion, roughly chopped
  • 3 cloves garlic
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp baking powder
  • 3 tbsp all-purpose flour
  • Salt & pepper, to taste
  • Olive oil for frying

For the Creamy Lemon Feta Sauce:

  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • Zest of 1/2 lemon
  • Salt & pepper, to taste

For the Wraps:

  • 4 large pita breads or flatbreads
  • 1 cup shredded lettuce
  • 1/2 cup chopped tomatoes
  • 1/2 cup sliced cucumber
  • 1/4 cup thinly sliced red onion
  • 2 tbsp chopped fresh parsley

Instructions

  1. Make the Falafel: In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, flour, salt, and pepper. Pulse until mixture is coarse but holds together when pressed. Form into small balls or patties. Heat olive oil in a skillet over medium heat and fry falafel 3–4 minutes per side until golden brown. Drain on paper towels.
  2. Prepare the Creamy Lemon Feta Sauce: In a blender or bowl, combine feta, Greek yogurt, lemon juice, olive oil, garlic, and lemon zest. Blend or whisk until smooth and creamy. Adjust seasoning with salt and pepper.
  3. Assemble the Wraps: Warm pita breads slightly. Spread a generous layer of creamy lemon feta sauce on each pita. Add shredded lettuce, tomatoes, cucumber, and red onion. Top with warm falafel. Sprinkle with fresh parsley, fold, and serve immediately.
