For the Ground Beef:

- 1/4 teaspoon cinnamon
- Salt and freshly ground black pepper, to taste
- Juice of 1/2 lemon
For the Lemon Honey Feta Cream:
- 1/2 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- Zest of 1/2 lemon
- 1 small garlic clove, finely grated
- 1–2 tablespoons warm water (to thin if needed)
For Assembly:
- 4 soft pita breads
- 1 cup shredded lettuce
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- Fresh parsley, chopped
Instructions
- Cook the Ground Beef: Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant. Add ground beef and cook, breaking it apart with a spoon. Stir in oregano, smoked paprika, cumin, coriander, cinnamon, salt, and pepper. Cook for 7–9 minutes until browned and fully cooked. Finish with a squeeze of fresh lemon juice and adjust seasoning.
- Prepare the Lemon Honey Feta Cream: In a bowl, combine feta, Greek yogurt, honey, olive oil, lemon juice, lemon zest, and grated garlic. Blend or whisk until smooth and creamy. Add warm water a tablespoon at a time to achieve a drizzling consistency.
- Warm the Pitas: Heat pitas in a dry skillet or oven for 1–2 minutes until warm and soft.
- Assemble the Pitas: Spread a generous spoonful of lemon honey feta cream inside each pita. Add seasoned ground beef. Top with lettuce, cherry tomatoes, cucumber, red onion, and olives. Drizzle with extra feta cream and sprinkle with fresh parsley.
