For the Flatbread Base:
- 2 store-bought flatbreads or naan
- 2 tbsp olive oil
For the Hummus Layer:
- 1 cup hummus (store-bought or homemade)
- 1 tsp smoked paprika (optional)
For the Toppings:
- 1/2 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh mint
- 1 tsp lemon zest
Optional Drizzle:
- 1–2 tbsp olive oil
- 1 tsp balsamic glaze
Instructions
- Prepare the Flatbread: Preheat oven to 400°F (200°C). Brush flatbreads lightly with olive oil. Place on a baking sheet.
- Warm the Flatbread: Bake flatbreads 5–7 minutes until slightly crisp and warm. Remove from oven.
- Spread Hummus: Evenly spread hummus over the warm flatbreads. Sprinkle with smoked paprika if desired.
- Add Toppings: Arrange cherry tomatoes, cucumber, red onion, olives, and crumbled feta on top.
- Garnish & Finish: Sprinkle fresh parsley, mint, and lemon zest over the flatbread. Drizzle with olive oil and balsamic glaze if desired.
- Serve: Slice into wedges and serve immediately as a light lunch, snack, or appetizer.
