For the Flatbread Base:

  • 2 store-bought flatbreads or naan
  • 2 tbsp olive oil

For the Hummus Layer:

  • 1 cup hummus (store-bought or homemade)
  • 1 tsp smoked paprika (optional)

For the Toppings:

  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, sliced
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh mint
  • 1 tsp lemon zest

Optional Drizzle:

  • 12 tbsp olive oil
  • 1 tsp balsamic glaze

Instructions

  1. Prepare the Flatbread: Preheat oven to 400°F (200°C). Brush flatbreads lightly with olive oil. Place on a baking sheet.
  2. Warm the Flatbread: Bake flatbreads 5–7 minutes until slightly crisp and warm. Remove from oven.
  3. Spread Hummus: Evenly spread hummus over the warm flatbreads. Sprinkle with smoked paprika if desired.
  4. Add Toppings: Arrange cherry tomatoes, cucumber, red onion, olives, and crumbled feta on top.
  5. Garnish & Finish: Sprinkle fresh parsley, mint, and lemon zest over the flatbread. Drizzle with olive oil and balsamic glaze if desired.
  6. Serve: Slice into wedges and serve immediately as a light lunch, snack, or appetizer.
