Simple Lemon Herb Yogurt Dip

  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped
  • Pinch of salt

Board Add-Ons

  • 1 cup hummus
  • 1/2 cup kalamata olives
  • 1/2 cup cherry tomatoes
  • 1/2 cucumber, sliced
  • Warm pita bread or flatbread
  • Optional: toasted nuts (almonds, pistachios)

Instructions

  1. Roast the Vegetables – Preheat oven to 425°F (220°C). Toss zucchini, bell peppers, eggplant, and red onion with olive oil, salt, pepper, and oregano. Spread on a baking sheet; roast for 20–25 minutes.
  2. Prepare the Feta & Yogurt Dip – Place crumbled feta in a serving dish, drizzle with olive oil, sprinkle thyme, chili flakes. Mix yogurt, lemon juice, olive oil, parsley, and salt.
  3. Assemble the Tapas Board – Arrange roasted veggies, feta, hummus, tomatoes, cucumber, olives on a board. Serve with pita and nuts.
  4. Serve – Serve at room temperature or slightly warm. Enjoy mixed in pita or individually.
