- 1/2 tsp chili flakes (optional)
Simple Lemon Herb Yogurt Dip
- 1 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tbsp fresh parsley, chopped
- Pinch of salt
Board Add-Ons
- 1 cup hummus
- 1/2 cup kalamata olives
- 1/2 cup cherry tomatoes
- 1/2 cucumber, sliced
- Warm pita bread or flatbread
- Optional: toasted nuts (almonds, pistachios)
Instructions
- Roast the Vegetables – Preheat oven to 425°F (220°C). Toss zucchini, bell peppers, eggplant, and red onion with olive oil, salt, pepper, and oregano. Spread on a baking sheet; roast for 20–25 minutes.
- Prepare the Feta & Yogurt Dip – Place crumbled feta in a serving dish, drizzle with olive oil, sprinkle thyme, chili flakes. Mix yogurt, lemon juice, olive oil, parsley, and salt.
- Assemble the Tapas Board – Arrange roasted veggies, feta, hummus, tomatoes, cucumber, olives on a board. Serve with pita and nuts.
- Serve – Serve at room temperature or slightly warm. Enjoy mixed in pita or individually.
