Description

These Mixed Berry Pie Bars combine the sweet and tart flavors of berries with a buttery, flaky crust. Perfect for a quick dessert or snack!


Ingredients

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 cup cold butter, cubed

For the Berry Filling:

 

  • 2 cups mixed berries (blueberries, raspberries, blackberries)
  • 1/2 cup sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  • Prepare the Crust:

    • Preheat oven to 350°F (175°C).
    • Mix flour, sugar, and butter until crumbly. Press half into a greased baking dish.
  • Make the Filling:

    • In a saucepan, cook berries, sugar, cornstarch, and lemon juice until thickened.

 

  • Assemble & Bake:

    • Spread berry filling over the crust, crumble remaining dough on top, and bake for 35-40 minutes.

Notes

  • Use frozen berries if fresh are unavailable.
  • Let cool before cutting into bars for clean slices.
