  • 2 cups cooked jasmine or basmati rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced

  • 1/4 cup Kalamata olives, sliced

Instructions

  1. Marinate the Chicken: In a bowl, whisk olive oil, lemon juice, garlic, oregano, smoked paprika, cumin, salt, and black pepper. Add sliced chicken and toss well. Marinate for at least 20 minutes (or up to 4 hours refrigerated).
  2. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the marinated chicken for 6–8 minutes, stirring occasionally, until fully cooked and slightly charred at the edges. Remove from heat.
  3. Prepare the Creamy Garlic Feta: In a blender or food processor, combine feta, Greek yogurt, olive oil, lemon juice, garlic, and black pepper. Blend until smooth and creamy. Add warm water gradually until you reach a drizzle-friendly consistency.
