For the Chicken Gyro:
- 1 lb boneless skinless chicken thighs or breasts, sliced
- 2 tablespoons olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced

- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Creamy Garlic Feta:
- 3/4 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1 small garlic clove, minced
- 1–2 tablespoons warm water (to thin)
- Pinch of black pepper
For the Rice Bowl:
- 2 cups cooked jasmine or basmati rice
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- 2 tablespoons fresh parsley, chopped
Instructions
- Marinate the Chicken: In a bowl, whisk olive oil, lemon juice, garlic, oregano, smoked paprika, cumin, salt, and black pepper. Add sliced chicken and toss well. Marinate for at least 20 minutes (or up to 4 hours refrigerated).
- Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the marinated chicken for 6–8 minutes, stirring occasionally, until fully cooked and slightly charred at the edges. Remove from heat.
- Prepare the Creamy Garlic Feta: In a blender or food processor, combine feta, Greek yogurt, olive oil, lemon juice, garlic, and black pepper. Blend until smooth and creamy. Add warm water gradually until you reach a drizzle-friendly consistency.
- Assemble the Bowls: Divide cooked rice into serving bowls. Top with chicken gyro, cherry tomatoes, cucumber, red onion, and olives.
- Finish & Serve: Drizzle generously with creamy garlic feta and sprinkle with fresh parsley. Serve warm.
