For the Orzo

  • 1 cup dry orzo pasta
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • Pinch of salt

For the Lemon Feta Yogurt Sauce

  • 3/4 cup crumbled feta cheese
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1/2 tsp lemon zest
  • 1 tbsp olive oil
  • 12 tbsp warm water (to thin, if needed)

For the Bowl Toppings

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh dill or parsley

Instructions

  1. Cook the Orzo – Bring chicken broth to a boil in a saucepan. Add orzo and cook according to package instructions (8–10 minutes) until al dente. Drain if necessary and toss with olive oil, parsley, and a pinch of salt. Set aside.
  2. Marinate & Cook the Chicken – Whisk together olive oil, Dijon mustard, lemon juice and zest, garlic, smoked paprika, chili flakes, salt, and pepper. Marinate chicken for 20–30 minutes. Cook chicken in a skillet over medium-high heat for 5–6 minutes per side until golden and internal temperature reaches 165°F (74°C). Let rest before slicing.
  3. Make the Lemon Feta Yogurt Sauce – Combine feta, Greek yogurt, lemon juice, lemon zest, and olive oil. Blend until smooth, adding warm water gradually for desired consistency.
  4. Assemble the Bowls – Divide orzo among serving bowls. Top with sliced chicken, cherry tomatoes, cucumber, and red onion. Drizzle with lemon feta yogurt sauce and sprinkle with fresh dill or parsley.
  5. Serve – Garnish with lemon wedges and extra chili flakes if desired. Serve warm.
