Description

Ingredients

  • 1 cup (2 sticks) unsalted butter

  • 1 cup brown sugar, packed

  • 1/2 cup granulated sugar

  • 1/2 cup milk

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1/2 cup caramel sauce (store-bought or homemade)

  • 3 cups quick oats (or old-fashioned oats, slightly pulsed in a blender)

  • Flaky sea salt, for topping


Instructions

  • Prepare Baking Sheet:

    • Line a baking sheet with parchment paper or a silicone mat to prevent sticking.

  • Melt Butter:

    • In a large saucepan, melt the butter over medium heat.

  • Add Sugars and Milk:

    • Add the brown sugar, granulated sugar, milk, and salt to the saucepan. Stir to combine, then bring the mixture to a gentle boil. Let it boil for about 1-2 minutes, stirring constantly.

  • Add Vanilla and Caramel:

    • Remove from heat. Stir in the vanilla extract and caramel sauce until fully incorporated.

  • Mix in Oats:

    • Stir in the oats, making sure they are evenly coated with the caramel mixture.

  • Form Cookies:

    • Drop spoonfuls (about 1-2 tablespoons each) of the oat mixture onto the prepared baking sheet.

  • Sprinkle Sea Salt:

    • While the cookies are still soft, sprinkle a little flaky sea salt over each one.

  • Chill to Set:

    • Let the cookies cool at room temperature or refrigerate them for 30-60 minutes until set.

Notes

  • For extra flavor, use homemade salted caramel sauce instead of store-bought.
