Lemon Dijon Chicken:
- 1 1/2 lb (700 g) boneless skinless chicken breasts or thighs
- 2 tbsp olive oil
- 2 tbsp Dijon mustard
- Zest and juice of 1 lemon
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and black pepper, to taste
Orzo:
- 1 1/2 cups orzo pasta
- 3 cups chicken broth or water
- 1 cup baby spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 small zucchini, diced
- Salt and black pepper, to taste
Whipped Feta Yogurt Sauce:
- 3/4 cup Greek yogurt
- 1/2 cup crumbled feta cheese
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 clove garlic, grated
- Salt and black pepper, to taste
Instructions
- Marinate the Chicken: In a bowl, whisk olive oil, Dijon mustard, lemon zest and juice, garlic, oregano, salt, and pepper. Add chicken and coat well. Marinate for 15–20 minutes.
- Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook chicken 5–6 minutes per side until golden and cooked through. Rest briefly, then slice thinly.
- Cook the Orzo: In a saucepan, bring chicken broth to a boil. Add orzo and cook according to package instructions until al dente. Drain if needed and stir in spinach, zucchini, and cherry tomatoes. Season with salt and pepper.
- Prepare the Whipped Feta Yogurt Sauce: In a blender or food processor, combine Greek yogurt, feta, olive oil, lemon juice, garlic, salt, and pepper. Blend until smooth and creamy.
- Assemble the Bowls: Divide orzo and vegetables into serving bowls. Top with sliced chicken and a generous dollop of whipped feta yogurt sauce.
- Serve: Garnish with fresh herbs and lemon wedges. Serve warm.
