  • Salt and black pepper, to taste

Orzo:

  • 1 1/2 cups orzo pasta
  • 3 cups chicken broth or water
  • 1 cup baby spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 small zucchini, diced
  • Salt and black pepper, to taste

Whipped Feta Yogurt Sauce:

  • 3/4 cup Greek yogurt
  • 1/2 cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, grated
  • Salt and black pepper, to taste

Instructions

  1. Marinate the Chicken: In a bowl, whisk olive oil, Dijon mustard, lemon zest and juice, garlic, oregano, salt, and pepper. Add chicken and coat well. Marinate for 15–20 minutes.
  2. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook chicken 5–6 minutes per side until golden and cooked through. Rest briefly, then slice thinly.
  3. Cook the Orzo: In a saucepan, bring chicken broth to a boil. Add orzo and cook according to package instructions until al dente. Drain if needed and stir in spinach, zucchini, and cherry tomatoes. Season with salt and pepper.
  4. Prepare the Whipped Feta Yogurt Sauce: In a blender or food processor, combine Greek yogurt, feta, olive oil, lemon juice, garlic, salt, and pepper. Blend until smooth and creamy.
  5. Assemble the Bowls: Divide orzo and vegetables into serving bowls. Top with sliced chicken and a generous dollop of whipped feta yogurt sauce.
  6. Serve: Garnish with fresh herbs and lemon wedges. Serve warm.
