For the macaroni:
- 12 oz elbow macaroni
- 4 oz Velveeta, cubed
- 1 1/2 cups shredded cheddar
- 1 cup shredded mozzarella
- 1/2 cup grated Parmesan
- 4 oz cream cheese, cubed
- 1 1/2 cups heavy cream
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 tsp Cajun seasoning
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the macaroni: Bring a large pot of salted water to a boil. Cook the macaroni until tender, then drain and set aside, reserving some pasta water.
- Sear the shrimp: Season the shrimp and cook in butter until pink and golden. Set aside.
- Prepare the sauce: In the same skillet, cook garlic, then add cream, cheeses, Cajun seasoning, and paprika. Simmer until thick.
- Combine: Mix in the cooked macaroni until coated in the cheese sauce. Add reserved pasta water if needed.
