For the Sponge Cake:
- 3/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3 eggs (room temperature)
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 tbsp vegetable oil
- 2 tbsp milk
- 1/2 tsp pink food coloring (optional)
For the Filling:
- 1 cup strawberry jelly or jam
- 1/2 cup whipped cream (optional)
For Garnish:
- Powdered sugar for dusting
Instructions
- Preheat & Prepare: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease it.
- Make the Batter: Whisk eggs and sugar until light and fluffy. Add vanilla, oil, and milk. Fold in flour, baking powder, salt, and pink food coloring.
- Bake: Pour batter into the prepared baking sheet and spread evenly. Bake for 10-12 minutes.
- Roll the Cake: While warm, place the cake onto a kitchen towel and roll it up gently. Let it cool for 15 minutes.
- Fill & Roll Again: Unroll the cake, spread jelly (and whipped cream if using), then carefully roll it back.
- Dust & Serve: Sprinkle powdered sugar on top, slice, and enjoy!
Notes
- Roll the cake while warm to prevent cracking.
- You can use raspberry or cherry jam for a flavor variation.
