Description

This Pink Jelly Roll Delight is a soft, fluffy sponge cake rolled with a luscious strawberry jelly filling. Its delicate texture and beautiful pink hue make it a perfect dessert for tea parties, birthdays, or any sweet occasion!

For the Sponge Cake:

  • 3/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 eggs (room temperature)
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp vegetable oil
  • 2 tbsp milk
  • 1/2 tsp pink food coloring (optional)

For the Filling:

  • 1 cup strawberry jelly or jam
  • 1/2 cup whipped cream (optional)

For Garnish:

  • Powdered sugar for dusting

Instructions

  • Preheat & Prepare: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease it.
  • Make the Batter: Whisk eggs and sugar until light and fluffy. Add vanilla, oil, and milk. Fold in flour, baking powder, salt, and pink food coloring.
  • Bake: Pour batter into the prepared baking sheet and spread evenly. Bake for 10-12 minutes.
  • Roll the Cake: While warm, place the cake onto a kitchen towel and roll it up gently. Let it cool for 15 minutes.
  • Fill & Roll Again: Unroll the cake, spread jelly (and whipped cream if using), then carefully roll it back.
  • Dust & Serve: Sprinkle powdered sugar on top, slice, and enjoy!

Notes

  • Roll the cake while warm to prevent cracking.
  • You can use raspberry or cherry jam for a flavor variation.
