Instructions

  1. Step 1: Prepare the Crust Preheat oven to 325°F (160°C). Grease a silicone dome mold or muffin tin. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press about 1 tablespoon into each mold cup to form a firm base. Chill in the fridge while preparing filling.
  2. Step 2: Make the Raspberry Surprise In a small bowl, mash raspberries with sugar and lemon juice. Set aside.
  3. Step 3: Prepare Pistachio Cheesecake Filling In a mixing bowl, beat cream cheese, powdered sugar, vanilla, and ground pistachios until smooth. Gently fold in whipped cream until fully combined.
  4. Step 4: Assemble the Domes Fill each crust with a layer of pistachio cheesecake filling, leaving a small well in the center. Add a teaspoon of the raspberry mixture into the center of each dome and cover with remaining cheesecake filling to enclose the raspberry. Smooth the top.
