For the Crust

- 4 tbsp unsalted butter, melted

- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup finely ground pistachios
- 1/2 cup heavy cream, whipped to stiff peaks
For the Raspberry Surprise
- 1/2 cup fresh or frozen raspberries
- 1 tbsp sugar
- 1 tsp lemon juice

Instructions
- Step 1: Prepare the Crust Preheat oven to 325°F (160°C). Grease a silicone dome mold or muffin tin. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press about 1 tablespoon into each mold cup to form a firm base. Chill in the fridge while preparing filling.
- Step 2: Make the Raspberry Surprise In a small bowl, mash raspberries with sugar and lemon juice. Set aside.
- Step 3: Prepare Pistachio Cheesecake Filling In a mixing bowl, beat cream cheese, powdered sugar, vanilla, and ground pistachios until smooth. Gently fold in whipped cream until fully combined.
- Step 4: Assemble the Domes Fill each crust with a layer of pistachio cheesecake filling, leaving a small well in the center. Add a teaspoon of the raspberry mixture into the center of each dome and cover with remaining cheesecake filling to enclose the raspberry. Smooth the top.
- Step 5: Chill Refrigerate for at least 4 hours or overnight until set.
- Step 6: Serve Carefully unmold the domes. Garnish with whole pistachios, fresh raspberries, or white chocolate shavings. Serve chilled.
