Description

This Quick Chicken Stroganoff is a lighter, budget-friendly twist on the classic beef stroganoff. Creamy, flavorful, and ready in no time — the perfect smart choice for an easy family dinner!


Ingredients

  • 500 g (about 1 lb) chicken breast or thighs, cut into strips

  • 250 g (about 9 oz) mushrooms, sliced

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 200 ml (3/4 cup) light cream or sour cream

  • 1 tablespoon olive oil

  • 1 teaspoon paprika

  • 1 tablespoon mustard (Dijon or whole grain)

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook until golden and cooked through. Remove from skillet and set aside.

  • In the same pan, add onion and mushrooms. Cook 5-7 minutes until softened and lightly browned. Add garlic and cook 1 minute more.

  • Return chicken to the pan. Stir in paprika and mustard.

  • Lower heat and add cream. Simmer gently for 2-3 minutes until the sauce is heated through and slightly thickened. Season with salt and pepper.

  • Sprinkle with fresh parsley and serve hot with rice, pasta, or mashed potatoes.

Notes

  • Use smoked paprika for added depth of flavor.

  • For extra richness, add a splash of white wine before adding the cream.

  • Works great with turkey or pork strips as well.
