Ingredients

500 g (about 1 lb) chicken breast or thighs, cut into strips

250 g (about 9 oz) mushrooms, sliced

1 onion, finely chopped

2 cloves garlic, minced

200 ml (3/4 cup) light cream or sour cream

1 tablespoon olive oil

1 teaspoon paprika

1 tablespoon mustard (Dijon or whole grain)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook until golden and cooked through. Remove from skillet and set aside.

In the same pan, add onion and mushrooms. Cook 5-7 minutes until softened and lightly browned. Add garlic and cook 1 minute more.

Return chicken to the pan. Stir in paprika and mustard.

Lower heat and add cream. Simmer gently for 2-3 minutes until the sauce is heated through and slightly thickened. Season with salt and pepper.

Sprinkle with fresh parsley and serve hot with rice, pasta, or mashed potatoes.
