- 1 tsp garlic powder
- 1 tsp dried thyme

Maple-Feta Crumble
- 150 g feta cheese (crumbled)
- 2 tbsp maple syrup
- 1/3 cup walnuts or pecans (toasted & chopped)
- 1/2 tsp chili flakes (optional)
Instructions
- Preheat oven: Preheat oven to 200°C (390°F) and line a baking tray with parchment paper.
- Toss vegetables: In a large bowl, toss broccoli, cauliflower, carrots, zucchini, bell pepper, and onion with olive oil, garlic powder, thyme, paprika, salt, and pepper.
- Roast vegetables: Spread vegetables on the baking tray and roast for 25–30 minutes until tender and caramelized, stirring halfway through.
- Prepare crumble: Mix crumbled feta with maple syrup, nuts, and chili flakes.
- Assemble: Transfer roasted vegetables to a serving dish, sprinkle with maple-feta crumble, and garnish with herbs and maple syrup.
