  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Maple-Feta Crumble

  • 150 g feta cheese (crumbled)
  • 2 tbsp maple syrup
  • 1/3 cup walnuts or pecans (toasted & chopped)
  • 1/2 tsp chili flakes (optional)

Instructions

  1. Preheat oven: Preheat oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. Toss vegetables: In a large bowl, toss broccoli, cauliflower, carrots, zucchini, bell pepper, and onion with olive oil, garlic powder, thyme, paprika, salt, and pepper.
  3. Roast vegetables: Spread vegetables on the baking tray and roast for 25–30 minutes until tender and caramelized, stirring halfway through.
  4. Prepare crumble: Mix crumbled feta with maple syrup, nuts, and chili flakes.
  5. Assemble: Transfer roasted vegetables to a serving dish, sprinkle with maple-feta crumble, and garnish with herbs and maple syrup.
  6. Serve: Enjoy warm!
