Description

This Rustic Mediterranean Bread and Hummus Board is a perfect appetizer or snack for gatherings. Creamy homemade hummus paired with assorted Mediterranean delights served on a board for a visually appealing and delicious treat.

Creamy Hummus

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 24 tablespoons cold water (for desired consistency)

For the Board

  • 1 large rustic Mediterranean bread loaf (sourdough or country bread), sliced
  • 1/2 cup cherry tomatoes
  • 1 cucumber, sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup roasted red peppers
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup marinated artichoke hearts

For Garnish

  • 2 tablespoons olive oil (for drizzling)
  • 1 teaspoon paprika or sumac
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges

Instructions

  1. Prepare the hummus – In a food processor, combine chickpeas, tahini, lemon juice, olive oil, garlic, cumin, and salt. Blend until smooth. Process the mixture for about 1–2 minutes. Add cold water one tablespoon at a time until the hummus becomes creamy and smooth. Adjust seasoning by adding extra lemon juice or salt if desired.
  2. Prepare the bread – Slice the rustic bread into thick slices. Lightly toast in the oven at 180°C (350°F) for about 5 minutes if you prefer warm bread.
  3. Plate the hummus – Spread the hummus into a shallow serving bowl or plate and use the back of a spoon to create small swirls. Drizzle olive oil over the hummus and sprinkle with paprika or sumac and chopped parsley.
  4. Assemble the board – Arrange the bread slices around the hummus along with cherry tomatoes, cucumber slices, olives, roasted red peppers, feta cheese, and artichoke hearts. Add lemon wedges to the board for serving.
  5. Serve – Serve immediately for dipping and spreading.
