  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon butter

For the Cherry Tomato Basil Topping

  • 1 1/2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 3 tablespoons chopped fresh basil

For the Finish

  • 8 oz (225g) fresh burrata cheese
  • Extra fresh basil leaves
  • Optional balsamic glaze for drizzling

Instructions

  1. Prepare the Chicken Pat chicken cutlets dry with paper towels. In a shallow dish, combine flour, salt, pepper, garlic powder, and Italian seasoning. Lightly dredge each cutlet in the flour mixture, shaking off excess.
  2. Cook the Cutlets Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a serving platter and keep warm.
  3. Prepare the Cherry Tomato Topping In the same skillet, add olive oil and sauté garlic for about 30 seconds until fragrant. Add cherry tomatoes, salt, pepper, and red pepper flakes. Cook 4–6 minutes until tomatoes soften and release their juices but still hold shape. Stir in fresh basil and remove from heat.
  4. Assemble the Dish Spoon the warm cherry tomato basil mixture over each chicken cutlet. Gently tear burrata and place pieces over the hot tomatoes so it begins to soften. Garnish with extra basil leaves. Drizzle lightly with balsamic glaze if desired. Serve immediately.
