Ingredients
For the Meatloaf:

1 1/2 pounds ground beef (or ground turkey)

1 large onion, thinly sliced

1 tablespoon olive oil

2 cloves garlic, minced

1/2 cup breadcrumbs (use gluten-free if necessary)

1/4 cup milk

1 egg

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper
For the French Onion Topping:

1 large onion, thinly sliced

1 tablespoon butter

1 tablespoon olive oil

1/2 cup beef broth
-
1/2 teaspoon sugar

1 teaspoon dried thyme

1 cup Swiss cheese, shredded
Instructions

Preheat oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.

In a skillet, heat olive oil over medium heat. Add the sliced onion and cook for about 10 minutes, stirring occasionally, until softened and golden. Stir in garlic and cook 1 minute more. Let cool slightly.

In a large bowl, combine ground beef, breadcrumbs, milk, egg, Worcestershire sauce, dried thyme, salt, pepper, and the cooked onions and garlic. Mix until well combined.

Shape mixture into a loaf and place in the prepared pan.

In the same skillet, heat butter and olive oil over medium heat. Add remaining sliced onion, beef broth, sugar, and dried thyme. Cook for 15 minutes, stirring occasionally, until onions are caramelized and the liquid has reduced.

Spread caramelized onions over the meatloaf. Bake for 45 minutes.

Sprinkle Swiss cheese over the meatloaf and bake an additional 5–7 minutes, until the cheese is melted and bubbly.

Let rest 10 minutes before slicing and serving.
