For the chicken:

- Salt and black pepper to taste
For the vegetables:
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 1/2 cup feta cheese, crumbled
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- Prepare the marinade: In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, paprika, salt, and black pepper.
- Marinate the chicken: Place the chicken on the sheet pan and brush with half of the marinade.
- Prepare the vegetables: In a large bowl, toss the zucchini, bell peppers, red onion, and cherry tomatoes with the remaining marinade. Spread them around the chicken on the sheet pan.
