Brussels Sprouts Skewers
- 500 g (1 lb) Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 8–10 wooden skewers, soaked in water for 30 minutes
Pecan Crust
- 1/2 cup pecans, finely chopped
- 2 tbsp panko breadcrumbs
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
Raspberry Chili Honey Glaze
- 1/2 cup raspberry preserves
- 2 tbsp honey
- 1/2–1 tsp chili flakes (adjust to taste)
- 1 tsp lemon juice
Instructions
- Preheat Oven: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Prepare Brussels Sprouts: Toss Brussels sprouts with olive oil, salt, and pepper.
- Make Pecan Crust: Mix chopped pecans, panko, olive oil, and smoked paprika in a small bowl.
- Assemble Skewers: Thread 3–4 Brussels sprout halves onto each skewer. Press pecan mixture gently onto the sprouts.
- Roast the Skewers: Place skewers on the baking sheet and roast for 20–25 minutes until Brussels sprouts are tender and the pecan crust is golden.
- Prepare Glaze: In a small saucepan, combine raspberry preserves, honey, chili flakes, and lemon juice. Heat over low flame until smooth and slightly thickened.
- Serve: Drizzle warm glaze over the skewers and garnish with fresh herbs. Serve immediately.
