Pecan Crust

  • 1/2 cup pecans, finely chopped
  • 2 tbsp panko breadcrumbs
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika

Raspberry Chili Honey Glaze

  • 1/2 cup raspberry preserves
  • 2 tbsp honey
  • 1/21 tsp chili flakes (adjust to taste)
  • 1 tsp lemon juice

Instructions

  1. Preheat Oven: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Prepare Brussels Sprouts: Toss Brussels sprouts with olive oil, salt, and pepper.
  3. Make Pecan Crust: Mix chopped pecans, panko, olive oil, and smoked paprika in a small bowl.
  4. Assemble Skewers: Thread 3–4 Brussels sprout halves onto each skewer. Press pecan mixture gently onto the sprouts.
  5. Roast the Skewers: Place skewers on the baking sheet and roast for 20–25 minutes until Brussels sprouts are tender and the pecan crust is golden.
  6. Prepare Glaze: In a small saucepan, combine raspberry preserves, honey, chili flakes, and lemon juice. Heat over low flame until smooth and slightly thickened.
  7. Serve: Drizzle warm glaze over the skewers and garnish with fresh herbs. Serve immediately.
