Ingredients

  • 4 pounds beef ribs (back ribs or short ribs)

  • 1 tablespoon olive oil

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 1 cup ketchup

  • 1/2 cup apple cider vinegar

  • 1/4 cup Worcestershire sauce

  • 1/4 cup brown sugar (packed)

  • 2 tablespoons Dijon mustard

  • 1 tablespoon smoked paprika

  • 1 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon black pepper

  • Salt to taste


Instructions

  • Heat olive oil in a skillet over medium-high heat. Brown the ribs on all sides.

  • In the slow cooker, layer the chopped onion and minced garlic.

  • In a bowl, whisk together ketchup, vinegar, Worcestershire sauce, brown sugar, mustard, paprika, chili powder, garlic powder, black pepper, and salt.

  • Pour the sauce mixture into the slow cooker over the onions and garlic.

  • Nestle the browned ribs into the sauce, turning to coat fully.

  • Cover and cook on low for 7–8 hours or high for 3–4 hours, until ribs are tender and falling off the bone.

  • Optional: Place ribs on a baking sheet and broil for 3–5 minutes to caramelize the sauce.
