  • 2 lbs (900 g) boneless, skinless chicken thighs or breasts
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Peanut Sauce:

  • 3/4 cup natural peanut butter
  • 1 cup coconut milk
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp fresh lime juice
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 tsp red chili flakes (optional)

For Serving:

  • 2 cups cooked jasmine rice
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp chopped peanuts
  • Lime wedges

Instructions

  1. Prepare the Chicken: Season chicken with salt, pepper, and paprika. Heat olive oil in a skillet over medium heat. Sear chicken for 2–3 minutes per side until lightly golden (this adds extra flavor but is optional).
  2. Make the Peanut Sauce: In a bowl, whisk together peanut butter, coconut milk, honey, soy sauce, lime juice, garlic, ginger, and chili flakes until smooth.
  3. Slow Cook: Place chicken in the slow cooker. Pour peanut sauce over the chicken, making sure it is fully coated. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is tender and fully cooked.
  4. Finish & Serve: Shred chicken slightly or leave whole, then stir into the sauce. Serve over warm jasmine rice. Garnish with chopped cilantro, crushed peanuts, and a squeeze of fresh lime.
