For the Chicken:
- 2 lbs (900 g) boneless, skinless chicken thighs or breasts
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Peanut Sauce:
- 3/4 cup creamy peanut butter
- 1/2 cup low-sodium chicken broth
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp lime juice
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/2 tsp red pepper flakes (optional)
For Serving:
- 2 cups cooked jasmine rice
- 1/4 cup chopped peanuts
- 2 tbsp fresh cilantro, chopped
- Lime wedges
Instructions
- Prepare the Sauce: In a bowl, whisk together peanut butter, chicken broth, soy sauce, honey, lime juice, garlic, ginger, and red pepper flakes until smooth.
- Slow Cook: Place chicken in the slow cooker and season with salt and pepper. Pour peanut sauce over the chicken, ensuring it is well coated. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is tender and cooked through.
- Shred and Finish: Remove chicken and shred with two forks. Return shredded chicken to the slow cooker and stir to coat in sauce. Let cook an additional 10–15 minutes to absorb flavor.
- Serve: Spoon peanut chicken over cooked jasmine rice. Garnish with chopped peanuts and fresh cilantro. Serve with lime wedges on the side.
