Description

These Soft Goat Cheese and Zucchini Bites are light, fluffy, and full of flavor. Perfect as a savory snack, appetizer, or served with a salad for a light meal. Easy to make and delicious warm or at room temperature!


Ingredients

  • 200 g (about 1 cup) grated zucchini

  • 150 g (about 5 oz) fresh goat cheese (or crumbled)

  • 100 g (3/4 cup) all-purpose flour

  • 50 g (1/2 cup) grated Parmesan

  • 3 eggs

  • 100 ml (1/3 cup + 1 tbsp) milk

  • 4 tablespoons olive oil

  • 1 packet baking powder (about 2 tsp)

  • Salt and pepper, to taste

  • Herbes de Provence or fresh basil


Instructions

  1. Preheat oven to 180°C (350°F).

  2. In a mixing bowl, whisk the eggs with the milk and olive oil.

  3. Add the flour, baking powder, Parmesan, salt, pepper, and herbs. Mix until smooth.

  4. Fold in the grated zucchini and crumbled goat cheese.

  5. Pour the batter into greased muffin tins or a loaf pan.

  6. Bake for 20-25 minutes until golden and puffed.

  7. Let cool slightly before removing from the pan.

Serve warm or at room temperature with a green salad.

Notes

  • You can substitute goat cheese with feta or ricotta for variation.

  • These bites freeze well and can be reheated in the oven.

  • Add a pinch of chili flakes for a spicy twist.
