Ingredients

  • 1 1/2 cups granulated sugar

  • 1 1/2 cups light brown sugar, packed

  • 1 cup evaporated milk

  • 4 tbsp unsalted butter

  • 1 tsp vanilla extract

  • 2 cups pecan halves

  • Pinch of salt


Instructions

  • Line a baking sheet with parchment paper and set aside.

  • In a medium saucepan, combine sugars, evaporated milk, and butter over medium heat. Stir continuously.

  • Bring to a boil and cook until mixture reaches soft-ball stage (235°F/113°C on a candy thermometer).

  • Remove from heat, stir in vanilla, salt, and pecans.

  • Beat the mixture with a wooden spoon until it thickens and becomes creamy (about 3–5 minutes).

  • Quickly drop spoonfuls onto the prepared sheet.

 

Notes

  • Toasting the pecans beforehand enhances flavor.

  • Store in an airtight container for up to 2 weeks.
