Description

Ingredients

  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • Salt & black pepper (to taste)
  • 1 zucchini, sliced
  • 1 potato, sliced
  • 1/2 cup shredded cabbage
  • 1/4 cup shredded carrots
  • 2 tbsp mayonnaise
  • 1 tsp lemon juice

Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, honey, soy sauce, paprika, garlic powder, cayenne, salt, and pepper. Coat the drumsticks and marinate for at least 30 minutes.
  2. Roast the Vegetables: Preheat oven to 400°F (200°C). Arrange potatoes and zucchini on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for 25-30 minutes.
  3. Cook the Chicken: Grill or bake the chicken at 375°F (190°C) for 30-35 minutes, flipping halfway until fully cooked.
  4. Prepare the Slaw: Mix cabbage, carrots, mayonnaise, lemon juice, and salt.
  5. Serve: Plate the chicken with the roasted vegetables and slaw.
