- 6 chicken drumsticks
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp paprika
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- Salt & black pepper (to taste)
- 1 zucchini, sliced
- 1 potato, sliced
- 1/2 cup shredded cabbage
- 1/4 cup shredded carrots
- 2 tbsp mayonnaise
- 1 tsp lemon juice
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, honey, soy sauce, paprika, garlic powder, cayenne, salt, and pepper. Coat the drumsticks and marinate for at least 30 minutes.
- Roast the Vegetables: Preheat oven to 400°F (200°C). Arrange potatoes and zucchini on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for 25-30 minutes.
- Cook the Chicken: Grill or bake the chicken at 375°F (190°C) for 30-35 minutes, flipping halfway until fully cooked.
- Prepare the Slaw: Mix cabbage, carrots, mayonnaise, lemon juice, and salt.
- Serve: Plate the chicken with the roasted vegetables and slaw.
