Description

These Strawberry Cheesecake Cookies are soft, buttery treats packed with crushed freeze-dried strawberries and filled with a rich cream cheese center. A delicious twist on classic cookies, these strawberry cheesecake cookies combine fruity flavor and creamy indulgence in every bite.


Ingredients

Cookie Dough:

  • 1/2 cup unsalted butter, softened

  • 3/4 cup granulated sugar

  • 1 large egg

  • 1 tsp pure vanilla extract

  • 1 3/4 cups all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup freeze-dried strawberries, crushed

Cheesecake Filling:

  • 4 oz cream cheese, softened

  • 2 tbsp powdered sugar

  • 1/2 tsp vanilla extract

Optional Topping:

  • Extra crushed freeze-dried strawberries

  • White chocolate drizzle


Instructions

  • Prepare the Cheesecake Filling:

    • Mix softened cream cheese, powdered sugar, and vanilla extract in a small bowl until smooth.

    • Scoop into 12 small dollops (about ½ tsp each) onto parchment paper and freeze for at least 30 minutes.

  • Make the Cookie Dough:

    • Cream together butter and granulated sugar until light and fluffy.

    • Add egg and vanilla; mix until combined.

    • In a separate bowl, whisk flour, baking powder, and salt.

    • Gradually mix dry ingredients into wet mixture.

    • Fold in crushed freeze-dried strawberries.

  • Assemble the Cookies:

    • Scoop 1½ tbsp of dough and flatten slightly.

    • Place a frozen cheesecake dollop in the center.

    • Cover with another piece of dough and seal edges to form a ball.

    • Place on a parchment-lined baking sheet.

  • Chill (Optional):

    • Chill cookie dough balls for 15–20 minutes to prevent spreading.

  • Bake:

    • Preheat oven to 350°F (175°C).

    • Bake cookies for 12–14 minutes, or until edges are set and tops are slightly golden.

    • Cool on the baking sheet for a few minutes before transferring to a wire rack.

  • Top (Optional):

    • Drizzle with melted white chocolate or sprinkle with extra crushed freeze-dried strawberries before serving.
