For the Creamy Hot Honey Feta Sauce:
- 1/2 cup crumbled feta cheese
- 2 tbsp Greek yogurt or cream cheese
- 1 tbsp honey
- 1 tsp hot sauce
- 1 tsp lemon juice
- 1/2 tsp lemon zest
For the Bowl:
- 2 pita breads, toasted and cut into wedges
- 1 cup cooked rice or quinoa
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
Instructions
- Cook the Ground Chicken: Heat olive oil in a skillet over medium heat. Add ground chicken and cook until lightly browned, breaking it into crumbles.
- Stir in onion and garlic and cook until softened.
- Season the Chicken: Add smoked paprika, cumin, oregano, red pepper flakes, salt, and black pepper. Stir in tomato paste and cook for 2–3 minutes until fragrant. Remove from heat.
- Prepare the Creamy Hot Honey Feta Sauce: In a bowl, combine feta, Greek yogurt (or cream cheese), honey, hot sauce, lemon juice, and lemon zest. Whip until smooth and creamy.
- Assemble the Bowls: Divide rice or quinoa into serving bowls. Add cooked ground chicken, toasted pita wedges, cherry tomatoes, cucumber, and red onion.
