- 4 whole wheat pita pockets, halved
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 2 cups mixed greens
For the Creamy Hot Honey Feta Sauce:
- 1/2 cup crumbled feta cheese
- 1/4 cup Greek yogurt
- 2 tbsp honey
- 1 tsp red chili flakes
- 1 tbsp lemon juice
- 2 tbsp olive oil
Instructions
- Prepare the Lamb: Heat olive oil in a skillet over medium heat. Add onion and garlic; sauté until translucent. Add ground lamb and cook until browned, breaking it apart with a spatula. Stir in cumin, smoked paprika, coriander, red pepper flakes, salt, and pepper. Cook 2–3 minutes more until fragrant.
- Make the Sauce: In a small bowl, whisk together feta, Greek yogurt, honey, red chili flakes, lemon juice, and olive oil until smooth and creamy. Adjust honey or chili to taste.
- Assemble the Pita Bowls: Place pita halves on serving plates. Layer with mixed greens, cherry tomatoes, cucumber, red onion, and olives. Spoon the warm spiced lamb over the veggies. Drizzle generously with creamy hot honey feta sauce. Garnish with fresh parsley.
