For the Ground Chicken:
- 1 lb (450 g) ground chicken
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 small onion, finely chopped
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Spicy Lemon Honey Feta Cream:
- 1/2 cup crumbled feta cheese
- 1/4 cup plain Greek yogurt
- 2 tbsp honey
- 1 tbsp fresh lemon juice
- 1/2 tsp lemon zest
- 1/4–1/2 tsp red pepper flakes (adjust to taste)
- 1 tsp olive oil
For the Flatbread:
- 2 large flatbreads or naan
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 small red onion, thinly sliced
- 2 tbsp fresh parsley, chopped
Instructions
- Cook the Ground Chicken: Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté for 2–3 minutes until fragrant. Add ground chicken, smoked paprika, oregano, cumin, salt, and black pepper. Cook for 6–8 minutes, breaking up the chicken until browned and fully cooked.
- Prepare the Spicy Lemon Honey Feta Cream: In a small bowl, mix feta cheese, Greek yogurt, honey, lemon juice, lemon zest, red pepper flakes, and olive oil until creamy and well combined.
- Warm the Flatbread: Lightly toast flatbreads in a skillet or oven at 375°F (190°C) for 3–4 minutes until warm and slightly crisp.
- Assemble the Flatbreads: Spread a generous layer of spicy lemon honey feta cream over each flatbread. Top with the cooked ground chicken.
- Add Fresh Toppings: Sprinkle cherry tomatoes, cucumber, red onion, and parsley over the chicken.
- Serve: Slice the flatbreads and drizzle with extra spicy lemon honey feta cream if desired. Serve immediately.
