For the Roasted Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme

For the Orzo

  • 1 cup orzo pasta
  • 2 cups vegetable or chicken broth
  • 1 tablespoon olive oil

For the Garlic Whipped Feta

  • 1/2 cup feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 1 small garlic clove, minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice

Instructions

  1. Marinate the chicken – In a bowl, combine diced chicken with olive oil, balsamic vinegar, oregano, salt, and pepper. Toss to coat and set aside for 10–15 minutes.
  2. Roast the vegetables – Preheat the oven to 200°C (400°F). Toss cherry tomatoes, zucchini, and red bell pepper with olive oil, salt, pepper, and thyme. Spread on a baking sheet and roast for 15–20 minutes until tender and slightly caramelized.
  3. Cook the orzo – In a medium saucepan, bring broth to a boil. Add orzo and cook according to package instructions (usually 8–10 minutes) until al dente. Drain and toss with olive oil.
  4. Cook the chicken – Heat a skillet over medium-high heat. Sear marinated chicken for 6–8 minutes until fully cooked and lightly browned.
  5. Prepare the garlic whipped feta – In a food processor or small bowl, blend feta, Greek yogurt, minced garlic, olive oil, and lemon juice until smooth and creamy.
  6. Assemble the bowls – Divide cooked orzo into serving bowls. Top with roasted vegetables and balsamic chicken. Spoon garlic whipped feta on top or on the side.
  7. Garnish and serve – Sprinkle with fresh parsley and drizzle with extra balsamic glaze if desired.
