Description

These Thai Peanut Marinated Chicken Skewers are bursting with flavor from a sweet and savory peanut sauce infused with garlic, ginger, and lime. Perfectly grilled and topped with fresh cilantro, they’re a quick and delicious dinner or party appetizer.

Ingredients

  • 1 lb chicken breast, cut into bite-sized cubes

  • 1/4 cup peanut butter (smooth or crunchy)

  • 2 tablespoons soy sauce

  • 1 tablespoon honey

  • 1 tablespoon rice vinegar

  • 2 teaspoons sesame oil

  • 2 garlic cloves, minced

  • 1 teaspoon fresh ginger, grated

  • 1/2 teaspoon chili flakes (optional)

  • 1 tablespoon lime juice

  • 1/4 cup chopped cilantro (for garnish)

  • Skewers (wooden or metal)

Instructions

  • Make the Marinade:

    • In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, chili flakes (if using), and lime juice until smooth.

  • Marinate the Chicken:

    • Add chicken cubes to the marinade, toss to coat.

    • Cover and refrigerate for at least 30 minutes (up to 2 hours).

  • Prepare the Skewers:

    • Preheat grill or grill pan to medium-high.

    • Thread marinated chicken onto skewers, leaving space between pieces.

  • Grill the Skewers:

    • Grill for 5–7 minutes per side until chicken is fully cooked and nicely charred.

  • Serve:

    • Remove from grill, garnish with chopped cilantro.

    • Serve with rice or a crunchy salad.

Notes

  • Soak wooden skewers in water for 20 minutes before grilling to prevent burning.

  • Add chopped peanuts or green onions for extra texture.

  • Can be baked or air-fried if a grill is not available.
