For the Chocolate Crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
For the Berry Mousse:
- 1 1/2 cups raspberries
- 1/4 cup sugar
- 1 tbsp lemon juice
- 1 tbsp gelatin powder
- 1/4 cup cold water
- 1 cup heavy cream, whipped
For the Chocolate Mousse Layers:
- 8 oz dark chocolate, melted
- 8 oz milk chocolate, melted
- 8 oz white chocolate, melted
- 3 cups heavy cream, divided
- 3 tbsp gelatin powder, divided
Instructions
- Prepare the Crust: Mix cookie crumbs and melted butter. Press into a springform pan and chill.
- Make the Berry Mousse: Blend raspberries, sugar, and lemon juice. Heat and dissolve gelatin in water, then mix into berries. Fold in whipped cream and layer over crust. Chill for 30 minutes.
- Prepare Chocolate Mousses: For each mousse layer (dark, milk, and white), dissolve gelatin in warm cream and mix with melted chocolate. Fold in more whipped cream and layer one at a time over the berry mousse, chilling between layers.
- Decorate: Top with fresh berries and drizzle with chocolate.
- Chill for 4 hours before serving.
