For the Grouper:

  • 2 grouper fillets (about 6 oz / 170 g each)
  • 1 tbsp coconut oil (or olive oil)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika
  • Juice of 1/2 lime

For the Spicy Coconut Sauce:

  • 1/2 cup full-fat coconut milk
  • 1 tsp red curry paste (or chili paste)
  • 1 tsp grated fresh ginger
  • 1 small garlic clove, minced
  • 1 tsp honey
  • Juice of 1/2 lime
  • Pinch of salt

Optional Garnish:

  • Fresh cilantro
  • Red chili slices
  • Toasted coconut flakes

Instructions

  1. Prepare the Grouper: Pat grouper fillets dry and season with salt, pepper, and smoked paprika.
  2. Sear the Grouper: Heat coconut oil in a skillet over medium-high heat. Sear grouper for about 2–3 minutes per side until golden and cooked through. Remove from pan and squeeze fresh lime juice over top.
  3. Make the Spicy Coconut Sauce: In the same pan, reduce heat slightly and add coconut milk, curry paste, ginger, garlic, honey, and lime juice. Simmer 1–2 minutes until slightly thickened.
  4. Assemble and Serve: Spoon the spicy coconut sauce over the grouper and garnish with cilantro and chili slices. Serve immediately with jasmine rice, quinoa, or sautéed greens.
