- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic (minced)
- 1 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- Wooden skewers (soaked in water if needed)
For the Spicy Feta Dip:
- 150g feta cheese
- 3 tbsp Greek yogurt
- 1–2 tbsp olive oil
- 1 tbsp lemon juice
- 1 clove garlic
- 1 tsp chili flakes (adjust to taste)
- 1 tsp honey
- Pinch of salt
For the Grazing Board:
- Warm pita bread or flatbread
- Cherry tomatoes (halved)
- Cucumber slices
- Red onion (thinly sliced)
- Kalamata olives
- Roasted red peppers
- Fresh parsley and dill
- Lemon wedges
Instructions
- Marinate the Chicken – In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper. Add chicken cubes and marinate for at least 30 minutes (or overnight for deeper flavor).
- Grill the Chicken – Thread chicken onto skewers. Grill on a hot pan or grill for 10–12 minutes, turning until golden, slightly charred, and fully cooked.
- Make the Spicy Feta Dip – Blend feta, Greek yogurt, olive oil, lemon juice, garlic, chili flakes, honey, and salt until smooth and creamy.
- Prepare the Board – Warm pita bread and arrange on a large serving board. Place grilled chicken skewers in the center. Add Fresh Mediterranean Sides – Arrange tomatoes, cucumber, onions, olives, roasted peppers, and herbs around the board for color and freshness.
