Ingredients

1 cup fresh cilantro leaves

2-3 fresh red chili peppers

2-3 fresh green chili peppers

1/2 cup fresh lime juice (about 3 limes)

1 small tomato, diced

1 garlic clove, minced

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon sugar (optional)

1/4 teaspoon ground black pepper
Instructions

Wash herbs and chili peppers. Remove stems and roughly chop the peppers.

In a blender or food processor, combine cilantro, diced tomato, chopped chiles, lime juice, garlic, olive oil, salt, sugar (if using), and black pepper.

Pulse until smooth. Add a little water to adjust consistency if desired.

Taste and adjust seasoning with more salt, lime juice, or sugar.

Pour into a clean jar and store in the fridge for up to 2 weeks.
