  • 1 tsp lemon juice
  • 1 tbsp water

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.
  2. Prepare the Vegetables: Toss sweet potato, butternut squash, and carrot slices with olive oil, salt, pepper, and thyme. Layer the vegetables in the baking dish, alternating slices to create a colorful pattern.
  3. Add Cheese and Nuts: Sprinkle crumbled feta evenly over the layered vegetables. Scatter half of the toasted walnuts between layers for added texture.
  4. Roast the Gratin: Cover the dish with foil and bake for 30 minutes. Remove foil and bake an additional 15–20 minutes until vegetables are tender and slightly caramelized on top.
  5. Prepare the Cranberry-Honey Glaze: In a small saucepan, combine chopped cranberries, honey, lemon juice, and water. Warm over low heat for 3–5 minutes until cranberries soften slightly and glaze thickens.
  6. Finish the Dish: Drizzle cranberry-honey glaze over the baked gratin. Sprinkle remaining toasted walnuts on top. Garnish with fresh parsley or thyme if desired.
