Instructions
- Preheat Oven: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.
- Prepare the Vegetables: Toss sweet potato, butternut squash, and carrot slices with olive oil, salt, pepper, and thyme. Layer the vegetables in the baking dish, alternating slices to create a colorful pattern.
- Add Cheese and Nuts: Sprinkle crumbled feta evenly over the layered vegetables. Scatter half of the toasted walnuts between layers for added texture.
- Roast the Gratin: Cover the dish with foil and bake for 30 minutes. Remove foil and bake an additional 15–20 minutes until vegetables are tender and slightly caramelized on top.
- Prepare the Cranberry-Honey Glaze: In a small saucepan, combine chopped cranberries, honey, lemon juice, and water. Warm over low heat for 3–5 minutes until cranberries soften slightly and glaze thickens.
