For the chicken:
- 1 1/2 lbs chicken breast, cut into thick pieces
- 4 tbsp butter
- 5 cloves garlic, minced
- 2 tsp Cajun seasoning
- 1 tsp smoked paprika
- Salt and black pepper to taste
For the fettuccine:
- 12 oz fettuccine
- 4 oz cream cheese, cubed
- 1 cup shredded mozzarella
- 1/2 cup grated Parmesan
- 1/2 cup shredded provolone
- 1 1/2 cups heavy cream
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the fettuccine: Boil salted water and cook fettuccine until al dente. Reserve 1 cup of pasta water before draining.
- Prepare the chicken: Season chicken with Cajun seasoning, paprika, salt, and pepper. Sear in butter until golden and cooked through.
- Make the sauce: In the same skillet, melt butter, sauté garlic, pour in cream, and simmer with Cajun seasoning. Add cream cheese and mix until smooth.
- Add cheeses: Stir in mozzarella, provolone, and Parmesan until melted and sauce is creamy.
- Combine: Toss cooked fettuccine in the sauce until well coated. Add reserved pasta water if needed.
