Units Scale

For the shrimp:

  • 1 1/2 pounds large shrimp, peeled and deveined
  • 4 tablespoons butter
  • 5 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the rigatoni pasta:

  • 12 ounces rigatoni pasta
  • 4 ounces Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 4 ounces cream cheese, cubed
  • 1 1/2 cups heavy cream
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Cook the rigatoni: Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook until tender with a slight bite according to package directions. Drain and set aside.
  2. Prepare the shrimp: Season shrimp with Cajun seasoning, smoked paprika, salt, and pepper. Cook in butter until golden and set aside.
  3. Make the creamy sauce: In the same skillet, cook garlic in butter, then add cream and Cajun seasoning. Stir in cheeses until smooth. Add mozzarella and Parmesan, then mix in cooked rigatoni.
  4. Combine and serve: Toss pasta in sauce, then plate and top with shrimp. Drizzle with garlic butter and garnish with parsley.

Notes

  • You can adjust the spice level by increasing or decreasing the amount of Cajun seasoning.
  • Feel free to add cooked vegetables like bell peppers or spinach to the pasta for extra flavor and nutrients.
