Marinated Chicken:
- 2 large chicken breasts
- 2 tbsp olive oil

Power Bowl:
- 1 cup cooked rice or quinoa
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
Herb Feta:
- 1/2 cup crumbled feta cheese
- 1 tbsp olive oil
- 1 tbsp fresh parsley, finely chopped
- 1 tsp fresh dill, chopped
- 1 tsp lemon zest
- Black pepper to taste
Tzatziki:
- 1/2 cup plain Greek yogurt
- 1/4 cup grated cucumber (excess water squeezed out)
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 tbsp fresh dill, chopped
- Salt and black pepper to taste
Instructions
- Marinate the Chicken: Season chicken with olive oil, lemon juice, paprika, oregano, cumin, garlic powder, salt, and pepper. Let marinate for 15–20 minutes.
- Cook the Chicken: Cook marinated chicken in a skillet or grill pan until fully cooked and golden. Slice into strips.
- Prepare Herb Feta: Mix feta cheese, olive oil, parsley, dill, lemon zest, and black pepper to make herb feta.
- Make Tzatziki: Combine Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper for tzatziki sauce.
- Assemble Power Bowl: Place rice or quinoa in a bowl. Top with chicken, tomatoes, cucumber, red onion, olives, parsley, mint. Add herb feta and tzatziki. Garnish with fresh herbs.
