  • 1 tsp fresh dill, chopped
  • Salt and black pepper, to taste

Instructions

  1. Roast sweet potatoes: Toss cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper. Roast at 400°F (200°C) for 20–25 minutes until tender and golden.
  2. Grill chicken: Season chicken with salt, pepper, and a drizzle of olive oil. Grill or pan-sear for 5–6 minutes per side until cooked through. Slice thinly.
  3. Prepare avocado salsa: Combine diced avocado, red onion, lime juice, and cilantro. Season with salt and pepper.
  4. Make lemon yogurt dip: Mix Greek yogurt, olive oil, lemon juice, parsley, dill, salt, and pepper until smooth.
  5. Assemble bowl: Layer quinoa or rice, roasted sweet potatoes, and grilled chicken slices. Top with avocado salsa and a dollop of lemon yogurt dip.
