Lemon Dijon Chicken

- 1 whole garlic head
- 1 teaspoon olive oil
- 1 cup Greek yogurt
- 1/2 cup feta cheese

- 1–2 tablespoons warm water (to thin if needed)
- Salt and black pepper to taste
Bowl Toppings
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- Lemon wedges for serving
Instructions
- Roast the Garlic – Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with 1 teaspoon olive oil, wrap in foil, and roast for 30–35 minutes until soft and caramelized. Let cool, then squeeze out the cloves.
- Marinate the Chicken – In a bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, oregano, paprika, salt, and pepper. Coat chicken evenly and marinate for at least 20 minutes.
- Cook the Orzo – In a saucepan, bring chicken broth to a boil. Add orzo and salt. Simmer for 8–10 minutes until tender. Drain excess liquid if needed and toss with olive oil.
- Cook the Chicken – Cook marinated chicken in a skillet for 5–7 minutes per side until golden brown and cooked through. Let rest and slice.
- Prepare the Roasted Garlic Feta Yogurt Sauce – Blend roasted garlic cloves, Greek yogurt, feta, lemon juice, and olive oil until smooth. Adjust consistency with warm water. Season with salt and pepper.
- Assemble the Bowls – Divide orzo among bowls. Top with sliced chicken, tomatoes, cucumber, onion, parsley, and dill.
- Finish & Serve – Drizzle bowls with yogurt sauce and serve with lemon wedges.
