  • 1 tsp smoked paprika

  • 1 tbsp olive oil

For the Wraps:

  • 4 large whole wheat or flour tortillas
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 2 cups mixed greens
  • 1/4 cup kalamata olives, sliced

For the Whipped Spicy Lemon Honey Feta:

  • 1/2 cup crumbled feta
  • 2 tbsp Greek yogurt
  • 1 tbsp honey
  • 1 tsp red chili flakes (adjust to taste)
  • 1 tsp lemon juice
  • 1 tbsp olive oil

Instructions

  1. Cook the Turkey: Heat olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant and translucent. Add ground turkey and cook until browned, breaking apart with a spatula. Stir in cumin, smoked paprika, red pepper flakes, salt, and pepper. Cook 2–3 more minutes until fragrant.
  2. Make the Whipped Feta: Blend feta, Greek yogurt, honey, red chili flakes, lemon juice, and olive oil until smooth and creamy.
  3. Assemble the Wraps: Warm tortillas lightly. Spread a generous layer of whipped spicy lemon honey feta on each tortilla. Layer cooked turkey, cherry tomatoes, cucumber, olives, and mixed greens. Roll tightly and slice in half if desired.
  4. Serve: Serve immediately, with extra whipped feta on the side for dipping.
