For the Turkey:
- 1 lb ground turkey
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp red pepper flakes (optional for heat)

- 1 tbsp olive oil
For the Wraps:
- 4 large whole wheat or flour tortillas
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 2 cups mixed greens
- 1/4 cup kalamata olives, sliced
For the Whipped Spicy Lemon Honey Feta:
- 1/2 cup crumbled feta
- 2 tbsp Greek yogurt
- 1 tbsp honey
- 1 tsp red chili flakes (adjust to taste)
- 1 tsp lemon juice
- 1 tbsp olive oil
Instructions
- Cook the Turkey: Heat olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant and translucent. Add ground turkey and cook until browned, breaking apart with a spatula. Stir in cumin, smoked paprika, red pepper flakes, salt, and pepper. Cook 2–3 more minutes until fragrant.
- Make the Whipped Feta: Blend feta, Greek yogurt, honey, red chili flakes, lemon juice, and olive oil until smooth and creamy.
- Assemble the Wraps: Warm tortillas lightly. Spread a generous layer of whipped spicy lemon honey feta on each tortilla. Layer cooked turkey, cherry tomatoes, cucumber, olives, and mixed greens. Roll tightly and slice in half if desired.
- Serve: Serve immediately, with extra whipped feta on the side for dipping.
