For the Shrimp

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons honey
  • 1 teaspoon smoked paprika

  • Salt and black pepper, to taste
  • Juice of 1/2 lemon

For the Orzo

  • 1 cup orzo pasta
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • Salt, to taste

For the Feta Sauce

  • 1/2 cup crumbled feta cheese
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 small garlic clove, minced
  • 12 tablespoons warm water (to thin as needed)

For the Roasted Cranberries

  • 1/2 cup fresh or frozen cranberries
  • 1 tablespoon honey
  • 1/2 teaspoon olive oil
  • Pinch of salt

Optional Garnish

  • Fresh parsley or dill
  • Lemon wedges
  • Extra honey drizzle

Instructions

  1. Roast the Cranberries – Preheat oven to 375°F (190°C). Toss cranberries with honey, olive oil, and a pinch of salt. Spread on a small baking sheet and roast for 10–12 minutes until slightly softened and caramelized. Set aside.
  2. Cook the Orzo – In a medium saucepan, heat olive oil over medium heat. Add orzo and toast for 1–2 minutes. Pour in broth and bring to a boil. Reduce heat and simmer for 8–10 minutes until orzo is tender and liquid is absorbed. Season with salt to taste.
  3. Cook the Shrimp – Heat olive oil in a large skillet over medium-high heat. Add minced garlic and sauté for 30 seconds. Add shrimp, smoked paprika, crushed red pepper flakes, salt, and pepper. Cook for 2–3 minutes per side until pink and opaque. Drizzle with honey and lemon juice, tossing to coat.
  4. Make the Feta Sauce – In a small bowl, whisk together feta, Greek yogurt, lemon juice, lemon zest, and garlic. Add warm water a little at a time until smooth and pourable.
  5. Assemble the Dish – Plate cooked orzo as a base. Top with honey garlic shrimp. Drizzle with feta sauce and scatter roasted cranberries on top. Garnish with fresh parsley or dill and extra honey if desired. Serve warm as a flavorful Mediterranean-inspired meal.
