For the Flatbread:
- 2 large flatbreads or naan
- 1 tbsp olive oil
- 8 oz (225 g) halloumi cheese, sliced
- 1/2 tsp dried oregano
- 1/4 tsp black pepper
For the Creamy Hot Honey Feta Sauce:
- 1/2 cup crumbled feta cheese
- 3 tbsp Greek yogurt
- 1 tbsp honey
- 1/2 tsp chili flakes (adjust to taste)
- Juice of 1/2 lemon
- 1 clove garlic, minced
- 1–2 tsp water (to thin if needed)
For the Toppings:
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, thinly sliced
- 1/4 red onion, thinly sliced
- 2 tbsp fresh parsley, chopped
- Optional: Kalamata olives
Instructions
- Cook the Halloumi: Heat a skillet over medium heat and add olive oil. Cook the halloumi slices for 2–3 minutes per side until golden and crispy. Sprinkle with oregano and black pepper.
- Warm the Flatbread: Place flatbreads in a preheated oven at 375°F (190°C) for 4–5 minutes or warm in a skillet until slightly crisp.
- Prepare the Creamy Hot Honey Feta Sauce: In a bowl, whisk together feta cheese, Greek yogurt, honey, chili flakes, lemon juice, and garlic. Add a little water if needed to reach a creamy, drizzleable consistency.
- Assemble the Flatbread: Spread a few spoonfuls of the hot honey feta sauce over each warm flatbread. Top with crispy halloumi slices, cherry tomatoes, cucumber, red onion, and parsley.
- Serve: Slice the flatbread and serve immediately with extra creamy hot honey feta sauce drizzled on top or on the side.
