  • 8 oz (225 g) halloumi cheese, sliced
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper

For the Creamy Hot Honey Feta Sauce:

  • 1/2 cup crumbled feta cheese
  • 3 tbsp Greek yogurt
  • 1 tbsp honey
  • 1/2 tsp chili flakes (adjust to taste)
  • Juice of 1/2 lemon
  • 1 clove garlic, minced
  • 12 tsp water (to thin if needed)

For the Toppings:

  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped
  • Optional: Kalamata olives

Instructions

  1. Cook the Halloumi: Heat a skillet over medium heat and add olive oil. Cook the halloumi slices for 2–3 minutes per side until golden and crispy. Sprinkle with oregano and black pepper.
  2. Warm the Flatbread: Place flatbreads in a preheated oven at 375°F (190°C) for 4–5 minutes or warm in a skillet until slightly crisp.
  3. Prepare the Creamy Hot Honey Feta Sauce: In a bowl, whisk together feta cheese, Greek yogurt, honey, chili flakes, lemon juice, and garlic. Add a little water if needed to reach a creamy, drizzleable consistency.
  4. Assemble the Flatbread: Spread a few spoonfuls of the hot honey feta sauce over each warm flatbread. Top with crispy halloumi slices, cherry tomatoes, cucumber, red onion, and parsley.
  5. Serve: Slice the flatbread and serve immediately with extra creamy hot honey feta sauce drizzled on top or on the side.
