Crispy Chickpeas

  • 1 can chickpeas, drained and patted dry
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Roasted Sweet Potatoes

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Whipped Feta

  • 4 oz feta cheese
  • 1/3 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic
  • 23 tablespoons water (to thin if needed)
  • Pinch of salt

Garlic Honey

  • 2 tablespoons honey
  • 2 cloves garlic, finely grated
  • 1 tablespoon olive oil
  • Pinch of chili flakes (optional)

Bowl Base

  • 1 cup cooked quinoa or rice
  • 1/2 cup fresh spinach or arugula
  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking tray.
  2. Toss chickpeas with olive oil, paprika, cumin, garlic powder, salt, and pepper. Spread on half the tray.
  3. Toss sweet potatoes with olive oil, paprika, garlic powder, cinnamon (if using), salt, and pepper. Spread on the other half.
  4. Roast for 25–30 minutes until sweet potatoes are tender and chickpeas are crispy.
  5. Combine feta, Greek yogurt, olive oil, lemon juice, garlic, water, and salt in a blender or bowl. Blend until smooth and creamy.
  6. Warm honey slightly and mix with grated garlic, olive oil, and chili flakes to make garlic honey.
  7. Assemble bowls with quinoa or rice as the base. Add spinach, roasted sweet potatoes, and crispy chickpeas.
  8. Drizzle generously with whipped feta and garlic honey. Garnish with fresh parsley.
  9. Serve warm and enjoy.
