  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced

  • 3 cloves garlic, minced

Seasonings:

  • 1 teaspoon paprika
  • 1/2 teaspoon chili flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme

Cheese and Garnish:

  • 1/2 cup cottage cheese
  • 1/4 cup shredded mozzarella (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for 2–3 minutes until fragrant and softened.
  2. Add ground turkey and cook until browned and fully cooked, breaking it apart with a spatula.
  3. Stir in diced bell peppers, paprika, chili flakes, salt, black pepper, oregano, and thyme. Cook for 5–7 minutes until peppers are tender but still slightly crisp.
  4. Remove from heat and dollop cottage cheese over the skillet mixture. Stir lightly or leave as is for creamy pockets of cheese.
  5. Top with shredded mozzarella if desired and allow to melt slightly.
