  • 3 large sweet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Toppings

  • 200g brie cheese, sliced
  • 1/3 cup dried cranberries
  • 1/2 cup walnuts, roughly chopped
  • 2 tablespoons honey
  • 1/2 teaspoon chili flakes
  • 1 tablespoon butter

Optional Garnish

  • Fresh thyme
  • Flaky sea salt

Instructions

  1. Preheat oven: Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Prepare sweet potatoes: Peel and slice sweet potatoes into thick rounds. Boil for 10–12 minutes until just tender. Drain and let cool slightly.
  3. Smash sweet potatoes: Place sweet potato rounds on the tray and gently smash each one with a fork or glass.
  4. Season and roast: Drizzle with olive oil and season with garlic powder, smoked paprika, salt, and black pepper. Roast for 25–30 minutes until crispy and golden at the edges.
  5. Prepare toppings: In a pan over medium heat, melt butter and toast walnuts for 2–3 minutes. Add honey and chili flakes, stirring until coated and slightly caramelized.
  6. Assemble and bake: Remove sweet potatoes from the oven and top each piece with brie. Return to oven for 3–5 minutes until the cheese is soft and melted.
  7. Final touches: Sprinkle with cranberries and spicy honey walnuts. Garnish with fresh thyme and flaky sea salt. Serve warm.
