For the Tzatziki Drizzle:

  • 1/2 cup grated cucumber, squeezed dry
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • Salt and black pepper to taste

For the Board Garnish:

  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken pieces and toss to coat. Marinate for at least 30 minutes.
  2. Skewer the Chicken: Thread marinated chicken onto skewers.
  3. Grill the Chicken: Preheat grill or grill pan over medium-high heat. Grill skewers for 3–4 minutes per side, or until fully cooked.
  4. Prepare the Feta Dip: Combine feta, Greek yogurt, garlic, lemon juice, olive oil, salt, and pepper in a bowl. Blend until smooth.
  5. Create the Tzatziki Drizzle: Mix Greek yogurt, grated cucumber, garlic, lemon juice, salt, and pepper until smooth.
  6. Assemble the Board: Arrange grilled chicken skewers, feta dip, tzatziki drizzle, cherry tomatoes, cucumber, olives, and parsley on a large serving board.
