- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup shredded lettuce
- 1/4 cup olives (optional)
- 1/4 cup crumbled feta
- Fresh parsley, chopped
Instructions
- Marinate the Chicken: In a bowl, combine olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and toss to coat. Marinate for 20–30 minutes.
- Cook the Chicken: Heat a skillet or grill pan over medium-high heat and cook chicken for 8–10 minutes until golden and fully cooked.
- Prepare the Garlic Sauce: In a bowl, whisk together Greek yogurt, garlic, lemon juice, olive oil, salt, and water until smooth and creamy.
- Assemble the Bowls: Prepare bowl base with rice, quinoa, or couscous. Add grilled chicken on top. Layer cherry tomatoes, cucumber, red onion, lettuce, olives, and feta.
- Drizzle with Sauce: Drizzle generously with garlic sauce.
- Garnish and Serve: Garnish with fresh parsley. Serve immediately while fresh and flavorful.
